In the September 2009 issue of Details magazine there is a great article on ribs. The point that they get across is that great ribs do not have to be slathered in BBQ sauce to be delicious. In fact, it is often refreshing to taste delicious ribs that step outside of this commonly used flavor profile. They give a recipe for asian-inspired ribs (let me know if you would like it) and also list the best places in the US to get non-BBQ racks of ribs:
- The Fatty Crab in New York City
- Eos in Miami
- The Publican in Chicago
